To begin with, a few terms so as not to get lost in the vastness of Japanese cuisine.
Sushi is a traditional Japanese dish. Sushi is prepared from rice, various seafood and other ingredients. Roughly speaking, sushi is like pizza for us: you can put everything that is at hand inside. Some Japanese consider roll with potatoes and mushrooms a delicacy.
Rolls (makizushi) are translated from Japanese as twisted sushi or sushi rolls. This, in turn, is a type of sushi; are a twisted sausage made of rice and stuffing, wrapped in pressed seaweed (nori sheet) and cut into 6-8 slices.
You can cook sushi, rolls at home in various ways: with a nori sheet outside (futomaki, hosomaki), and rice outside (uramaki), as well as in the form of cone-shaped figures (temaki). They also prepare “colored” and “mosaic” rolls, rolls “inside out” and much more. You can also wrap the rolls not with a sheet of nori, but with a thin omelette.

Of course, we do not claim such high quality workmanship, but for a homemade Japanese-style dinner, our recipes are an excellent option. Cooking sushi, rolls at home is not so difficult, we managed to achieve a more or less even ringlet and slices the second time, which is what we wish you. So,

You will need:
- Boiled rice. For sushi, special rice is used, which is boiled with special sauces. Such rice costs 3 times more than usual, but there is no strong difference. Therefore, ordinary rice is suitable, which must be boiled until fully cooked. We do this: bring to a boil, salt and leave for an hour, stirring occasionally. After an hour, bring to a boil again (add water if necessary) and keep for another half hour. After - rinse. The water that runs off the rice can be used to glue the nori sheets together.
- Red fish - salmon (slightly salted). The fish must be fresh, you say. And you will be absolutely right, but think about where you can find fresh fish in our field conditions. Therefore, it is desirable to salt the fish. Believe me, the charm of our meal is not only in fresh fish. We take salmon, cut it into pieces 1 cm wide of any length and add salt (half a teaspoon of salt per 1 salmon steak, salt for 2-4 hours).
- Nori leaves. Sold in literally any supermarket.
- Cucumber, lettuce, green onion feathers.
Photo 1. We take a sheet of nori, put it with the glossy side up and put a thin layer of rice about 6-7 cm wide on it. There are special lines on the nori sheet, along which (it is supposed) it is more convenient to cut them. As it seemed to us, these lines only interfere, the main thing is a sharp and dry knife.
Photo 2. We spread the filling on top of the rice. We have it - salted salmon, lettuce, cucumber and green onions. Depending on where you put the filling (in the center, above, below), it will end up looking like a roll.
Photo 3. The result is such a sausage that needs to be cut into even pieces. It may seem to you that there is a lot of stuffing in the roll and little rice. You can choose the proportions for yourself, we like it that way.
Photo 4. You can decorate sushi as you wish. You need to eat them as soon as possible. Serve with wasabi, soy sauce and pickled ginger (lost in photo).

Updated . The other day we made a California roll (with rice outside). What the roll looks like - look at the photos below. Ingredients - nori sheet, cooked rice with rice vinegar (California roll needs rice to be very sticky), eel, avocado and cucumber.

I have been making sushi for a long time.
I can say that the photo does not show the correct example of sushi, since their basis is rice. And there should be much more of it than shown. You need to wrap it not in a whole sheet of nori, but in half.
I use whole ones only for thick rolls - futomaki.
