Our two-year-old baby is a meat eater and loves sausages very much. Store-bought sausages have always been infamous, so there is no question of feeding such a child. But you really want to please your family with something tasty, so we learned how to make homemade sausages, which quickly appealed to everyone. And we are 100% convinced that the product of our own production does not contain anything harmful and chemical.
So, what you need to stock up on before cooking:
- medium-sized chicken fillet 2 pcs., You can also try pork,
- 1 egg;
- milk or cream 80-100 ml;
- salt;
- pepper;
- favorite seasonings (we did without them);
- one small beet;
- food wrap.
Cut the chicken fillet into pieces and grind in a meat grinder or beat with a blender until a pasty state. If only a meat grinder is at hand, then it is desirable to scroll three times.
Add milk (we had cream), an egg, mix everything thoroughly again.
Now a little subtlety. If sausages are made from minced meat obtained in this way, then, of course, they turn out to be completely pale, BUT they do not cause appetite in our child 🙁 Although they taste very good.
Therefore, to give a pink color to our product, we added beetroot juice to the minced meat. The beets must be peeled, grated on a fine grater and squeezed out the juice through several layers of gauze. Do not be alarmed that the stuffing has acquired a rather dark color. During cooking, the juice is partially evaporated and the result is excellent.
Once again knead the minced meat with all the ingredients added, add salt and pepper to taste, seasonings, let the minced meat rest a bit and you can begin to form sausages.
We will use cling film as a shell.
We roll out the film, put a portion of minced meat on the edge (one or two tablespoons, depending on desire) and begin to roll it into a tube, giving the product the shape of a sausage and squeezing air out of the minced meat so that there are no voids in the finished sausage. Then we cut off the film from the roll and tightly bandage it at the ends of the sausage.
The semi-finished product is ready. Now it remains to boil homemade sausages in boiling water with a little salt for 5-7 minutes.
Remove the film from the finished sausages and can be served with any side dish. If it is also prepared for adults, then sausages can be fried in vegetable oil until golden brown, so they will be more appetizing.

If frozen, then a week or two is calm, again depending on the storage conditions, if at -18, then a month can be stored.

Olga, I hope everything works out for you. Boiled pork is always dark in color, you need very little beetroot juice, less than a teaspoon. Although it all depends on the amount of minced meat.
